Avocado Jack


  • 2 to 3 Medium or Large Avocados
  • Cooking Spray or Butter
  • Eggs
  • Salt and Pepper to taste

Unit: Griddle or Large Skillet



Cut the avocados in half and remove the pit. Next, slice the avocado into 1/2” slices and remove the peeling. There should be a hole in the center of each slice.

Preheat the skillet on medium heat for 3 to 4 minutes and then coat the skillet with oil or butter.

Place the avocado slices into the skillet.

Crack an egg and separate the yolk from the egg whites. Place the yolk into the whole of an avocado slice. Repeat for each slice in the skillet.

Cook for a few minutes on each side until the egg yolks are cooked to your liking.
