Cooking with Low-Moisture Veggies

Low-moisture vegetables need to be cooked differently than high-moisture vegetables because they are easier to scorch to the unit.

Low-moisture vegetables Include:

  • Cauliflower
  • Fresh green beans
  • Broccoli
  • Asparagus
  • Corn on the cob
  • Artichokes
  • Snow peas

There are 3 ways to cook them.

Method 1: Combine them with high-moisture vegetables.

Method 2: Flash cook them with a meat.

Method 3: Steam them in the steamer insert.
